Crockpot Salsa Chicken

Ingredients:
4 skinless boneless chicken breast halves
1 package reduced-sodium taco seasoning mix
1 cup salsa

Spray the crockpot with cooking spray. Add the chicken breasts. Sprinkle with Taco Seasoning. Top with salsa. Cook on low for 6-8 hours.
When ready to serve, remove the chicken from the pot and shred with a fork.

Makes 4 servings
3 points per serving.

Serve over rice (add points)

Modification: add a can of corn (drained) and a can of black beans (drained and rinsed) but add points.

This is really good. The version of the recipe I tried involves adding fat free sour cream to the “sauce” at the end to make it creamy. It’s really good! I’ve never tried it with black beans, but that’s a great idea too!
