Put Your Mind To It, Go For It


This one always pleases! I don’t have exact measurements. I eyeball everything but I don’t think you can really screw this one up.

Fresh tomatoes
Large red onion (usually medium onion to every 4-5 large tomatoes)
Fresh or dried basil
Garlic salt
Garlic powder
Black pepper
Olive Oil
Balsalmic Vinegar

Dice tomatoes. Toss the seeds and extra liquid and just keep the solid tomato pieces. Dice the onion. Mix together in a bowl. Coat with olive oil. Depending on the number of tomatoes and onions you will need a different measure. For a large batch I rarely use more than a quarter-cup. Douse in balsalmic. The mixture should be saturated but not swimming. Add in dried seasonings. Season to taste.

The only thing in this recipe that has points is the olive oil. 3 points per tablespoon. If you use a quarter cup, the entire recipe is 12 points. This will easily serve 12 people.

Serve on crackers, toast, over chicken, on salad, etc.
